The factory is quite small- they only produce a few thousand pounds of chocolate per day compared to 30 times that amount at larger less artisanal type factories.<br /> As a side note I also love the book on The Essence of Chocolate by Robert Steinberg and John Scharfenberger. Check it out if you don't have it already.
