Portobello Lasagna Rollups for Craving Ellie in My Belly #6

If it’s Thursday it must be time for CEiMB! This week’s recipe is Portobello Lasagna Rollups with Easy Tomato Sauce from pages 152-153 of “The Food You Crave”, by Ellie Krieger- and was chosen by the lovely Marthe from Culinary DelightsNatalie from What’s for Supper? has been nice enough to take on the overall responsibility for Craving Ellie from Leigh at Lemon Tartlet and the Dust Bunnies, who had other things to attend to.

I enjoyed the recipe- had leftovers for lunch today in fact. The rollups are a nice easily portioned change from the usual layered type lasagna. I did add some onion and garlic as I thought the recipe needed them. I also added a bit of lean Italian sausage to the mushroom portion of the sauce. It added a few calories but lots of flavour. The whole wheat lasagna is (I think) better and more satisfying than regular white pasta and with the spinach adds a bit better nutrition to the dish. Since I was in a bit of a hurry making this, I used  The Silver Palate bottled Marinara for the sauce. Easy peasy and good!

    I too thought that the rollups provided a great way to portion out the lasagna. Yours also look so yummy standing up.

    I haven’t tried the whole wheat lasagna noodles yet, but I have tried the others. After your recomendation I will give them a try! Love the portion control of this too.

  6. This looks great. I haven’t tried whole wheat lasagne noodles, but I’ll agree that whole wheat pasta has a better flavor than plain.

    I’ve never had good luck with whole wheat lasagna noodles. I love all of the other whole wheat noodles, but the lasagna ones have always been kind of “blah” for me. Maybe I need to try this recipe to change my mind!

    Leanne- Thanks – I don’t actually know if you end up with a smaller portion at each roll but it seemed easier for sure.

    Marie- I love ww spaghetti but this was my first go with ww lasagna- i thought it pretty good- I don’t know if lots of layers would be too much- but one spiraled noodle was yummy!

    Natalie- Thanks – they were kind of lolling about but turned out okay.

    FK- give it a try although the ww lasagna were a bit harder to find than other pasta shapes in ww.

    Deborah- Hey there! Again- I think the spiraled noodle helped by not making the lasagna noodle too heavy. So this recipe may be the one. :)
