Curried Butternut Squash Soup for CEiMB

Getting back on track with this soup for Craving Ellie in My Belly chosen by Mare at Meet Me In The Kitchen.  Mare is a fellow Utah Hive food blogger with a delicious, delightful, beautiful blog- yay!!!!

I really like this simple soup- it is easy to prepare, delicious and nutritious. It is bright and colourful and meets that “eat all of the colours of the rainbow” idea head on.

You saute an onion and some garlic in a very little oil (I halved what was written in the recipe and used olive not canola oil) add cut up fresh butternut squash cubes, some low sodium chicken broth (I used organic free-range) and some curry powder. Bring to a boil and then simmer until tender (all of this in under 20 minutes) and then puree with a bit of honey (I used half of what the recipe indicated again) and voila! A dollop of plain yogurt to offset the heat of the curry powder and you’re set.  As usual I’m not giving specifics of this recipe because it comes from The Food you Crave by Ellie Krieger and I think that really you should get the book.
