Curried Butternut Squash Soup for CEiMB

Getting back on track with this soup for Craving Ellie in My Belly chosen by Mare at Meet Me In The Kitchen. Mare is a fellow Utah Hive food blogger with a delicious, delightful, beautiful blog- yay!!!!

I really like this simple soup- it is easy to prepare, delicious and nutritious. It is bright and colorful and meets that “eat all of the colors of the rainbow” idea head on.

You sauté an onion and some garlic in a very little oil (I halved what was written in the recipe and used olive not canola oil) add cut up fresh butternut squash cubes, some low sodium chicken broth (I used organic free-range) and some curry powder. Bring to a boil and then simmer until tender (all of this in under 20 minutes) and then puree with a bit of honey (I used half of what the recipe indicated again) and voila! A dollop of plain yogurt to offset the heat of the curry powder and you’re set.  As usual I’m not giving specifics of this recipe because it comes from The Food you Crave by Ellie Krieger and I think that really you should get the book.

Some housekeeping notes as well- I haven’t felt too much like posting lately- getting sick seemed to through me off of my track. I am going to be “retooling” and focusing on more healthful fare in future so I have suspended my participation in a few groups such as the Daring Bakers, Tuesdays with Dorie and The Cake Slice Bakers. I will miss being a part of these groups of lovely bakers but -although I think a treat now and then will be doable -I still can’t be making treats every week. I will be staying with Craving Ellie in my Belly, Tyler Florence Fridays and You want Pies with That? – because one is more health focused, one gives me latitude to pick recipes that suit and making a pie once a month will be something to look forward to. Even at that I am behind on all of my group posting from being sick so I’ll try my best to catch up on those.  Thanks to everyone who has been hanging in there with me.

I plan to do lots of exploration of healthful and delicious dishes during the coming months and I hope you’ll come along for the ride.

Tyler Florence Fridays: Roasted Acorn Squash Stuffed with Cheese Tortellini

I recently joined a group of bloggers over at Tyler Florence Fridays hosted by Deb of Kahakai Kitchen, Megan of My Baking Adventures, and Natashya of Living in the Kitchen with Puppies. I really enjoy Tyler’s recipes and cookbooks and one of the best things I like about this group is that you choose your own recipe to make from any of his books each week. This week I chose Roasted Acorn Squash Stuffed with Cheese Tortellini from “Stirring the Pot”, page 78.  I give the dish and the cookbook both an enthusiastic thumb’s up.

I had been planning on making this already so I was good to go. The recipe is delicious and would be a good vegetarian main course for a dinner party. The presentation is lovely and appetizing.  You roast an acorn squash half until tender and stuff it with cheese tortellini in a garlic, parmesan and thyme white sauce, cover with more cheese and a couple of sage leaves and roast the whole thing a bit more until bubbly and scrumptious. My only changes in future will be to try to reduce the fat -maybe by using evaporated skim milk instead of the heavy cream for the white sauce. Otherwise it’s a keeper- a good combo of flavours and it feels a treat to eat. I served it with a fresh spinach salad and a glass of Sauvignon Blanc and it was a great meal.
